Meat & Fish from a better source

Recently, I have been motivated to try and eat meat and fish that comes from more “natural” sources, from animals that have been raised more humanely or allowed to develop in the wild, and those that haven’t been treated with antibiotics or fed unnatural foods such as grains.

In terms of fish, I have been ordering from Vital Choice Wild Seafood & Organics. The stuff is not cheap, but I see it as a long term investment for my health!

I only eat kosher meat, so it was a bit of a challenge to find, but the website Grow and Behold pasture raised meats. They advertise as selling, “OU Glatt Kosher meats raised on small family farms, with no hormones or antibiotics.” They also have deli style turkey slices that happen to be the only SCD friendly kosher deli that I have ever come across, which is really exciting. It also tastes REALLY good, I finished the first package of turkey in one day!

I have also been buying only pasture raised eggs- these are easier as they can be found in almost any supermarket!

Almond Flour Pizza

Here’s to thinking about pizza in an entirely new way! This delicious and good-for-you healthy pizza crust is homemade from almond flour, egg and farmers cheese. Topped with handmade tomato marinara sauce and sprinkled with cheddar cheese and oregano. Try this pizza yourself and transform the food you eat and your health

Ingredients:

  • 1.5 cups almond flour
  • 1 pack 7 5 ounce farmers cheese
  • 1 tsp salt
  • 1 egg
  • Marinara sauce
  • Grated cheddar cheese
  • Oregano

Instructions:
1. Mix the almond flour, farmers cheese, egg and salt in a food processor, by hand, or in a stand up mixer.
2. Using parchment paper, cut out a 12 inch circle to place on a 12 inch pizza pan (Tip: 12 inch pre-cut parchment paper rounds are available on amazon!)
3. Place dough in the center of the 12 inch parchment paper round. Place another piece of parchment paper on top of the dough and roll out the dough. Peel off the top piece of parchment paper and place the dough on the pizza pan.
4. Bake the dough for approximately 30 minutes or until slightly brown.
5. Allow dough to cool. Spread marinara sauce on the dough, then top with cheese and oregano. Bake until cheese looks properly melted, or for around 20 minutes.

SCD Sesame Flatbreads

Here is the recipe for our handmade SCD sesame flatbreads! Made with almond flour, farmer’s cheese, and sprinkled with sesame seeds. Next time you make a sandwich be sure to try this healthy and delicious option!

Ingredients:

  • 1 package 7.5 ounce farmer’s cheese
  • 1 cup almond flour 1 tsp salt
  • 3/4 tsp baking soda
  • 1 egg

Instructions: Combine all ingredients by hand and mix thoroughly. The Dough will be thick and sticky. Line 6 or 7 mini baking tart pans with parchment paper (See photograph below!). Using an ice cream scooper drop the dough into pans. Flatten. Sprinkle with sesame and bake for approx. 20 minutes or until golden. Enjoy!

SCD Cherry Meatballs

Check out these sweet and savory cherry stewed meatballs! They are a traditional Syrian dish that has been adapted for the SCD diet! Handmade with whole cherries, fresh lemon, cinnamon, and a hint of honey! An all natural dish made with real ingredients that it sure to nourish any appetite! Here is the recipe! (Adapted from the cookbook Aromas of Aleppo, by Poopa Dweck)

Ingredients:

Meatballs:

  • 1 lb ground beef
  • 1 tsp cinnamon
  • 1/2 tsp allspice

Sauce:

  • 3 onions chopped
  • 1 tbs olive oil
  • 2 packages of dark, sweet cherries 12 ounces each (no sugar added), or 1 lb fresh cherries, pitted
  • Juice of 1/2 a lemon
  • 2 tbs honey
  • 1 tsp cinnamon
  • 1 tsp allspice

Instructions: To make the sauce, sauté onions in olive oil for a few minutes until translucent. Add the cherries, cook on medium heat until the cherries start to let out water. Then, add the rest of the ingredients and bring the mixture to a boil. To make the meatballs, combine all meatball ingredients in a bowl and knead thoroughly by hand. Form meatballs and add to the sauce. Bring to boil. Cover the saucepan, reduce heat to low and simmer for 1 hour or until the sauce has thickened. Enjoy!

SCD Pesto Pasta

SCD Pesto Pasta (recipe for homemade pesto sauce)

The pasta in this recipe is the red lentil pasta from tolerant foods(website link: http://www.tolerantfoods.com/). You can get the pasta from your local whole foods or by ordering it online! We usually soak the pasta for around 8 hours even though we are not entirely sure if it is necessary! This pasta was topped with our homemade pesto sauce, check out the recipe below!

Ingredients:

  • 2 cups of basil
  • 1/2 cup olive oil
  • 1/2 cup pine nuts
  • 1 tsp salt
  • 4 garlic cloves

Directions: Process all the ingredients together in a food processor and enjoy!

SCD Cauliflower “Rice”

SCD Cauliflower “Rice”

This SCD Cauliflower “Rice” is an amazing starch substitute! This cauliflower rice is made from ground cauliflower heads, seasoned with turmeric, which gives it its beautiful, yellow color. So easy to make and so delicious! Here is the recipe!

Ingredients:

  • 1 medium cauliflower
  • 4 scallions
  • 1 tbs turmeric
  • 1 tbs olive oil
  • 1 tsp salt
  • 1/2 cup toasted pine nuts

Directions: Process the cauliflower in a food processor. Put it in a nut milk bag (which can be purchased on amazon!), and squeeze out as much water as possible. Chop scallions and sauté for a few minutes in a large saucepan. Add cauliflower, salt, turmeric, and cook for a few minutes until soft but not mushy. Toss with pine nuts and serve. Enjoy!

SCD Zucchini Quiche

SCD Zucchini Quiche: 

Ingredients:

  • 4 Zucchinis (Yellow summer squash is especially delicious!) 
  • 1 Onion
  • 3 Eggs
  • 1/2 cup of grated cheddar cheese
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Directions: 

Chop the zucchinis into little cubes, grease a pan with the olive oil, add the zucchini and onions to the pan, and cook for about 15 minutes until the zucchini softens and the onions are slightly brown. In a separate bowl, whisk the eggs, mix in the cheese, and add some salt and pepper. Pour the mixture into a baking dish and mix in the onions and zucchini. Bake in the oven at 350 degrees for 30 minutes or until the top is slightly brown. Enjoy!
